Recipe ingredients
- To taste spinach
- 2 medium mangoes
- 2 medium pink grapefruit
- 2 x 142 g frozen snow crab legs, thawed
- 1 pint strawberries or raspberries
- 3 Tbsp. (45 mL) toasted sesame seeds
- Dressing
- 1 cup (250 mL) 0% plain yogurt
- 3 Tbsp. (45 mL) lemon juice*
- 3 Tbsp. (45 mL) Irresistibles extra virgin olive oil*
- 2 tsp. (10 mL) Irresistibles turmeric*
- 1/4 cup (60 mL) minced chives
- Salt and pepper to taste
Preparation
Trim, wash and spin dry spinach. Set aside.
Peel mangoes and cut into 3/4-in. (2-cm) cubes. Set aside.
Cut off peel and white pith from grapefruit, and cut segments free from
membranes. Set aside.
Combine dressing ingredients and set aside.
In each plate, place some cubed mango and grapefruit segments on a bed of spinach.
Top with crabmeat.
Spoon dressing over the salad.
Garnish with berries.
Sprinkle with sesame seeds and serve.
