Recipe ingredients

  • 1 lb. (450 g) seedless watermelon
  • 1 Tbsp. (15 mL) clear corn syrup*
  • 1 Tbsp. (15 mL) lime juice
  • ⅓ (80 mL) water

Preparation

Cut watermelon into chunks and remove rind.
Purée watermelon in a food processor, and press through a fine sieve.
Combine corn syrup, water and lime juice in a saucepan and cook 4 minutes over medium heat.
Stir watermelon into dissolved syrup until well combined.
Pour into a rectangular plastic container.
Cover and freeze.
During freezing, stir every 30 minutes with a fork to break up ice crystals for uniform texture.
Keep frozen. To serve, scrape granité into shavings once more with a fork.

Suggestion

Experiment with different fruits to vary the flavour. But remember to adjust the quantity of water in this recipe depending on the texture of the fruit.
