Recipe ingredients
- 4 chicken breasts
- Marinade
- 1/4 cup (60 mL) Irresistibles extra virgin olive oil*
- 6 Tbsp.(90 mL) Irresistibles raspberry vinegar*
- 6 Tbsp.(90 mL) liquid honey*
- 2 Tbsp. (30 mL) Irresistibles Dijon mustard*
- 1 Tbsp. (15 mL) grated fresh gingerroot
- 1/4 cup (60 mL) raspberry
Preparation
Place chicken breasts in shallow dish.
In a mixing bowl, combine all marinade ingredients, except rasbberry ; stir well.
Pour a half marinade over chicken breasts ; place in refrigerator for about 10 minutes.
Drain chicken.
In a skillet, sear chicken on both sides ; cook for 5 minutes on each side and cook for another 10-16 minutes.
Deglaze with reserved marinade and add raspberry a few minutes.
Serve with chicken breasts.
