Recipe ingredients
- 1¼ cups (560 mL) all-purpose flour*
- 4 tsp. (20 mL) baking powder*
- ¾ tsp. (4 mL) salt
- ¼ tsp. (1 mL) baking soda*
- ½ cup (125 mL) cold butter*, cut into pieces
- 1½ cups (375 mL) buttermilk
- ½ tsp. (2 mL) Irresistibles cinnamon*
- 1 medium Granny Smith apple, diced
- 3 oz. (100 g) mild cheddar*, grated
- Milk as required
Preparation
Preheat oven to 400°F (200°C).
Put flour, baking powder, salt and baking soda in the food processor and pulse to combine.
Add butter and pulse until mixture resembles coarse crumbs.
Transfer mixture to a large bowl and stir in buttermilk and cinnamon just until moistened. Add diced apples and grated cheese and knead gently to mix in (6-7 at most or the dough will be tough).
On a floured surface, roll out dough about 1-in. (2.5-cm) thick.
Cut dough into 2-in. (5-cm) diameter circles and transfer to a baking sheet lined with parchment paper.
Brush scones with milk and bake 20 minutes or until golden brown.
Cool scones before serving.
Suggestion
Scones will keep several weeks refrigerated in an airtight container. A pastry blender can also be used to cut butter into dry ingredients until mixture resembles coarse crumbs.
