Recipe ingredients
- 1½ lb. (700 g) lean ground pork
- 2 Tbsp. (30 mL) dry white wine
- Hot sauce (Tabasco, harissa, Red Hot) to taste
- 2 Tbsp. (30 mL) plain fine breadcrumbs
- 1 Tbsp. (15 mL) grated ginger
- 1 Tbsp. (15 mL) Irresistibles curry powder*
- 2 tsp. (10 mL) minced garlic
- ½ tsp. (2 mL) salt
- ½ tsp. (2 mL) Irresistibles allspice*
- Mango Mayonnaise
- 1/2 cup (125 mL) mayonnaise*
- 1/2 cup (125 mL) minced fresh mango
- 2 Tbsp. (30 mL) lime juice
- Salt and pepper to taste
Preparation
In a large bowl, combine pork with wine, hot sauce, breadcrumbs, ginger, garlic and seasonings. Make 6 patties ¾ in. (1.5 cm) thick.
Barbecue
Preheat barbecue to medium.
Cook patties on the oiled grill, turning only once, for 15 - 20 minutes or until a meat thermometer reads 160°F (70°C) or juices run clear. Do not press patties.
Stove-top
Preheat oven to 350°F (180°C).
In a skillet, heat oil on medium-high and brown pork burgers 4 minutes per side.
Remove burgers to a baking sheet and finish in the oven for about 8 minutes.
Ground pork must always be fully cooked and never served underdone.
Mango Mayonnaise
Blend all ingredients together in a bowl and let rest 30 minutes in the refrigerator. Stored in an airtight container, this mayonnaise will keep several days in the refrigerator
Suggestion
Serve these burgers on sesame seed hamburger buns with crisp lettuce, and top with mango mayonnaise and grilled ¼-in (0.5-cm) slices of Spanish onion.* We recommend Selection and Irresistibles products.
