Cranberry-stuffed Apples Baked in Ginger Ale

Recipe ingredients
- 4 Cortland or Royal Gala apples
- ½ cup (125 mL) brown sugar*
- 2 Tbsp. (30 mL) half-salted butter*, softened
- 1 tsp. (5 mL) Irresistibles ground cinnamon*
- 4 tsp. (20 mL) dried cranberries or currants
- 4 tsp. (20 mL) pecans or walnuts*
- 1 cup (250 mL) ginger ale*
- Cinnamon sticks, ice cream*
Preparation
Preheat oven to 350ºF (180ºC).
Core apples three-quarters through.
Pare top 2 in. (5 cm) or so to prevent splitting during cooking.
In a bowl, combine brown sugar with butter and cinnamon.
Stuff apples halfway up and add cranberries and raisins.
Add remaining brown sugar mix.
Top with nuts.
Put stuffed apples in a buttered baking dish.
Add ginger ale.
Bake in the centre of the oven for 50 minutes or until apples are tender.
Garnish with cinnamon sticks and serve with ice cream.
