Recipe ingredients
- 1 cup (250 mL) vegetable broth
- ⅔ cup (160 mL) whole-wheat couscous
- ¼ cup (60 mL) chopped Spanish onion
- 1 cup (250 mL) diced tomatoes
- 1 cup (250 mL) chopped fresh parsley
- ¼ cup (60 mL) chopped fresh mint
- 1 tsp. (5 mL) chopped garlic
- 2 lemons, juice only
- ½ cup (125 mL) Irresistibles extra virgin olive oil*
- Irresistibles sea salt* to taste
- Freshly ground Irresistibles peppercorns* to taste
Preparation
Bring broth to a boil.
Remove from heat and pour over couscous. Cover and let stand 8 – 10 minutes.
Stir couscous with a fork. Cool.
Gently stir in onions, tomatoes, parsley, mint and garlic.
Toss with lemon juice and olive oil.
Adjust seasoning. Serve.
Goes well with grilled sausages and vegetables.
