Recipe ingredients
- Rendered duck fat or peanut oil* as required
- 4 medium Québec Yukon Gold potatoes
- Irresistibles sea salt* to taste
Preparation
In a deep fryer, preheat duck fat to 275°F (140°C).
Peel potatoes and cut into fries.
Blanch fries about 4 minutes and drain on paper towels. Cool.
In the deep fryer, heat duck fat to 350°F (180°C).
Add fries and cook about 5 minutes or until golden brown.
Drain and salt. Serve immediately.
Accompany with preferred flavoured mayonnaise.
Suggestion
Storing: if potatoes are in a plastic bag, transfer them to a paper bag to prevent mould caused by humidity.Do not store onions and potatoes side by side, or they will sprout.
Store potatoes in a dark place.
