Recipe ingredients
- 6 Yukon Gold potatoes, cut into long thick sticks
- 3 oz. (100 g) rendered duck fat, melted
Preparation
Preheat oven to 400°F (200°C).
Blanch cut potatoes in boiling salted water, then immerse in cold water to stop cooking and pat dry.
Spread duck fat on a baking sheet, add fries and bake for 20 minutes, brown turning 3 minutes.
Drain on paper towels. Salt and serve.
Suggestion
Thick-cut fries, called pont-neuf fries in French, are 2 in. (5 cm) thick or twice the size of ordinary fires.* We recommend Selection and Irresistibles products.
