Recipe ingredients

  • 5 Tbsp. (75 mL) Irresistibles extra virgin olive oil*
  • 2 medium onions, sliced thin
  • 1 garlic clove, chopped
  • 1 Tbsp. (15 mL) chopped chili pepper
  • ½ red pepper, in thin strips
  • ½ green pepper, in thin strips
  • 2 – 3 medium tomatoes, peeled and cut into wedges
  • 2 cups (500 mL) coconut milk
  • Salt to taste
  • 2 lb. 3 oz. (1 kg) bream or grouper fillets

Preparation

In a large pot over medium heat, brown onions, garlic and peppers in hot oil for 5 minutes.
Add tomatoes, coconut milk and salt.
Cover and cook for 10 minutes.
Lay fillets on top of the mixture and cook, covered, for 5 – 8 minutes.
Serve in soup plates.
