Recipe ingredients

  • 4 oz. (120 g) arugula, stems removed
  • ¼ cup (60 mL) mint leaves, chopped
  • 1 lb. (450 g) chicken breast*, grilled, and diced into ½-in. (1-cm) pieces
  • 2 Sunkist grapefruits**, peeled, segmented and seeded
  • 4 oz. (115 g) feta cheese, crumbled
  • 4 oz. (115 g) Niçoise olives
  • Sunkist Grapefruit dressing  
  • 1 cup (250 mL) fresh squeezed Sunkist grapefruit** juice
  • 1 tsp. (5 mL) Sunkist grapefruit**, zest
  • ½ cup (125 mL) commercial balsamic dressing

Preparation

Lay 1 oz (30 g) arugula and 1Tbsp. ( 15 mL) mint leaves evenly over 4 large chilled salad plates.
Arrange diced chicken and grapefruit segments on top of greens.
Sprinkle with Feta cheese and olives.
Drizzle Sunkist Grapefruit Vinaigrette.
Serve immediately.

Whisk juice, zest and vinaigrette together.
Cover and refrigerate until need.
