Refreshing Scallop Ceviche

Recipe ingredients
- 1 1/2 lime, en jus
- 4 Tbsp. (60 mL) Irresistibles extra virgin olive oil*
- ¼ cup (60 mL) chopped fresh mint
- 2 shallots, sliced thin
- 2 tsp. (10 mL) minced jalapeño pepper
- Salt and freshly ground pepper to taste
- 8 fresh sea scallops, muscle removed, sliced into 6 pieces
- 1½ cups (375 mL) diced English cucumber
- 1 cup (250 mL) cubed red seedless watermelon, ½-in. (1-cm) cubes
- 4 fresh jumbo shrimp, peeled and grilled (optional)
Preparation
In a large glass bowl, combine lime juice, oil, mint, shallots and jalapeño, salt and pepper.
Add scallops, stirring to coat evenly. Cover and refrigerate for 2 to 4 hours.
Stir in cucumber and watermelon just before serving.
Spoon into 4 glasses; garnish each with a grilled shrimp.
