Recipe ingredients

  • 1 Tbsp. (15 mL) sugar*
  • 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil*
  • 2 limes, juice only
  • 4 slices cored, unpeeled pineapple, cut 1 in. (2.5 cm) thick
  • 2 pints raspberries
  • 1 Tbsp. (15 mL) minced fresh mint
  • ¼ cup (60 mL) hazelnuts, toasted and crushed
  • 2 Tbsp. (30 mL) Irresistibles orange juice*

Preparation

Pineapple
Preheat barbecue to medium-high.
In a large bowl, combine sugar, olive oil and lime juice.
Add pineapple slices.
Grill pineapple slices about 3 minutes per side.
Raspberry Hazelnut Salad
In a bowl, combine raspberries with mint, crushed hazelnuts and orange juice.
Mash with a fork and serve over hot pineapple slices.
