Recipe ingredients
- Brochettes
- 8 jumbo raw peeled shrimp
- ½ firm mango, cut into 8 1-in. (2.5-cm) cubes
- ½ red pepper, cut into 8 cubes
- 4 small red onions, halved
- 1 lime, cut into 8 wedges
- Salt and pepper to taste
- Marinade
- 2 Tbsp. (30 mL) Irresistibles extra virgin olive oil*
- ½ tsp. (2 mL) Irresistibles ground cumin*
- ½ tsp. (2 mL) Irresistibles ground cayenne*
- ½ tsp. (2 mL) ground coriander
Preparation
Brochettes
Thread shrimp, mango, pepper, onions and lime onto 8 skewers that have been soaked in water. Season to taste. Set aside.
In a bowl, mix marinade ingredients together and brush over brochettes.
Refrigerate for 1 hour, turning brochettes over every 15 minutes.
Preheat barbecue to medium-high.
Grill brochettes 5 minutes per side or until shrimp are pink and vegetables are tender-crisp.
