Recipe ingredients
- 3 cups (750 mL) tomato sauce*
- ½ cup (125 mL) brown rum
- ½ cup (125 mL) water
- 7 Tbsp. (105 mL) brown sugar
- Dried hot pepper flakes to taste
- 1½ tsp. (7 mL) allspice
- Salt to taste
- 4 pieces pork back ribs
- 2 Tbsp. (30 mL) chopped fresh coriander or parsley
Preparation
In a large pot, combine tomato sauce with rum, water, brown sugar, hot pepper flakes, allspice and salt to taste.
Bring to a boil, add ribs, cover and simmer over low heat for approximately 45 minutes.
Preheat oven to broil.
Remove ribs and reserve sauce.
Broil ribs 3 – 4 minutes per side, basting them often with reserved sauce.
Take ribs out of the oven and sprinkle with chopped coriander before serving.
Serve with tabbouleh and grilled zucchini.
