Peppered Strawberries, Cantaloupe and Raspberries

Recipe ingredients
- 1 cup (250 mL) strawberries
- 1/2 cup (125 mL) cantaloupe balls made with a melon scoop
- 1/2 cup (125 mL) raspberries
- 1/4 cup (60 mL) maple syrup*
- 1/3 cup (80 mL) red wine
- To taste freshly ground Irresistibles black peppercorns*
- 1/2 cup (125 mL) 35% whipping cream
- fresh mint leaves to garnish
Preparation
Rinse strawberries and lay on paper towels to absorb excess moisture. In a bowl, mix raspberries and cantaloupe.
Hull and quarter strawberries adding, to bowl of raspberries and cantaloupe as you go along. Toss.
Pour maple syrup and red wine over fruit mixture and allow to acerate for 3 to 4 min.
Pepper generously and stir to blend.
Whip the cream to stiff peaks.
Serve fruit in a goblet, pretty glass or sundae dish.
Top with whipped cream and garnish with fresh mint leaves.
