Recipe ingredients
- 7 oz. (200 g) fresh scallops, finely diced
- 5 oz. (150 g) ripe Quebec cantaloupe, finely diced
- ¼ cup (60 mL) Irresistibles olive oil*
- 2 Tbsp. (30 mL) Irresistibles raspberry vinegar *
- 1 Tbsp. (15 mL) whipping cream
- 1 Tbsp. (15 mL) violet mustard or other flavoured mustard
- 1 Tbsp. (15 mL) fresh dill, minced (set aside sprigs for garnish)
- Salt and freshly ground pepper to taste
- 2 oz. (60 g) foie gras, finely diced
- Pink peppercorns to garnish
Preparation
In a bowl, combine all ingredients except foie gras.
Gently stir in foie gras so that foie gras dice remain whole.
Spoon tartare into two elegant fun goblets or decorative serving dishes.
Garnish with sprigs of dill and pink peppercorns.
