Recipe ingredients
- 5-oz (142 g) bag spring mix
- 2 green onions, sliced
- 1 fresh nectarine, pitted and sliced
- 1/4 cup (60 mL) pecans, toasted and chopped
- 1/3 cup (80 mL) puréed or finely mashed nectarine
- 3 tablespoons (45 mL) Irresistibles extra virgin olive oil*
- 2 Tbsp. (30 mL) fresh lemon juice
- 1 Tbsp. (15 mL) honey*
- 1/4 tsp. (1 mL) salt
- Freshly ground pepper to taste
- 1 cup (250 mL) fresh raspberries
Preparation
Place the mixed greens, onions, nectarine slices and pecans in a large salad bowl.
Whisk together puréed nectarine, oil, lemon juice, honey, salt and pepper and drizzle over the salad.
Toss well to coat.
Top with raspberries and toss very lightly.
