Recipe ingredients
- Sweet potato mash
- 2 medium sweet potatoes, peeled and cut into chunks
- 2 medium Irresistibles potatoes*, peeled and cut into chunks
- 1 Tbsp. (15 mL) butter*
- 1/4 cup (60 mL) sour cream*
- 2 Tbsp. (30 mL) chopped chives
- Salt and pepper to taste
- Mustard sauce
- 2 Tbsp. (30 mL) Irresistibles Dijon mustard*
- 2 tsp. (10 mL) Worcestershire sauce
- Rib steaks
- 4 rib steaks
- 1/4 cup (60 mL) Irresistibles olive oil*
Preparation
Sweet Potato Mash
Add potatoes to a pot of salted water. Bring to a boil and cook until tender. Drain.
Mash potatoes with a masher or potato ricer until smooth.
Stir in butter, sour cream and chopped chives. Season to taste.
Mustard sauce
Combine sauce ingredients. Set aside.
Rib steaks
Heat oil in a skillet over high heat and cook steaks 2 – 4 minutes per side or to desired degree of doneness.
Serve immediately with sweet potato mash and mustard sauce.
