Recipe ingredients

  • 1 lb. (450 g) smelts
  • 1 cup (250 mL) milk
  • Vegetable oil* for frying
  • Sufficient quantity, flour*
  • Salt to taste
  • 1 bunch parsley
  • 2 lemons, cut into wedges

Preparation

In a deep fryer, heat oil to 375°F (190°C).
Pat smelts dry; dip in milk then dredge in flour, shaking off excess flour.
Drop smelts into deep fryer.
Fry 5 – 7 minutes or until golden brown. Drain on paper towels. Salt.
Transfer to a serving platter and garnish with lemon wedges and parsley.
