Recipe ingredients

  • 1 lb. (450 g) ocean perch (redfish) fillets
  • 3 Tbsp. (45 mL) butter*, melted
  • 2 Tbsp. (30 mL) Irresistibles orange juice*
  • 1 tsp. (5 mL) ground fennel seed
  • Salt to taste
  • 1 Tbsp. (15 mL) coarsely grated orange peel (zest only)
  • 4 orange slices
  • Parsley to taste

Preparation

Preheat oven to 375°F (190°C).
Place fillets in a lightly oiled baking dish.
In a bowl, combine melted butter, orange juice, fennel seed and salt, and pour over fish.
Sprinkle with grated orange peel.
Bake approximately environ 10 minutes or until fish is easily flaked with a fork.
Garnish with orange slices and parsley and serve.
