Recipe ingredients
- 4 small sweet potatoes (batatas), peeled and cut into chunks
- ¼ cup (60 mL) yogurt
- 1 Tbsp. (15 mL) Irresistibles Dijon mustard*
- ⅓ cup (80 mL) Irresistibles red wine vinegar*
- ½ cup (125 mL) Irresistibles extra virgin olive oil*
- Chopped chives to taste
- Salt and pepper to taste
Preparation
In a pot of boiling salted water, blanch sweet potatoes for 4 – 6 minutes. Drain and cool.
In a bowl, whisk yogurt, Dijon mustard, vinegar, salt and pepper together.
Gradually add oil, whisking vigorously.
Add dressing and chives to sweet potatoes. Toss to coat evenly.
Adjust seasoning. Cover and refrigerate until it’s time to serve
