Recipe ingredients
- 4 5-oz. (150-g) Atlantic wolfish fillets
- ⅓ oz. (10 g) sea salt
- 19 oz. (540 mL) chick peas*
- 1 cup (250 mL) Irresistibles extra virgin live oil*
- 2 Irresistibles bay leaves*
- 2 star anise
- 1 garlic clove, chopped
- ½ oz. (15 g) chilli flakes
- ⅓ oz. (10 g) fennel seeds
- 1 lemon, zest only
Preparation
Salt flesh side of wolffish fillets. Let stand 15 minutes.
Preheat oven to 350°F (180°C).
In an oven-proof pan, combine chick peas with olive oil and remaining ingredients. Bake 30 minutes. Let rest in the oven.
Heat a skillet over medium heat and brown fish, skin-side down, in oil for 5 minutes.
Assembly
Lay wolffish fillets over top the chick peas. Sprinkle with lemon zest.
