Recipe ingredients

  • 1 pitaya (1 lb. / 450 g), cut in half, and flesh scooped out
  • 3 Tbsp. (45 mL) sugar*
  • 1/2 lemon, juiced

Preparation

In a food processor, purée the pitaya chunks with the sugar and lemon juice.
Pour into a deep dish and freeze for about 4 hours.
Put the half-frozen mixture in the processor and purée; return to the freezer. Repeat this operation a second time.
To serve, scrape the granita with a fork and place icy shavings into glasses or coupes.
