Recipe ingredients

  • 1 litre (4 cups) white chicken stock 
  • 125 ml (1/2 cup) white roux, cooled 

Preparation

In a saucepan, heat chicken stock.
Gradually whisk in white roux. Whisk until it begins to boil, and then cook over a low flame for 15 minutes.
Strain through a sieve and set aside.
