Recipe ingredients
- 2 ½ cups (625 mL) Irresistibles macaroni*
- 2 ½ oz (75 g) pancetta,diced
- 2 Tbsp. (30 mL) butter*
- 3 Tbsp. (45 mL) flour*
- 2 cups (500 mL) milk
- 1 cup (250 mL) grated Irresistibles old Cheddar*
- 2 cups (500 mL) grated Gouda*
- 1 cup (250 mL) grated Brick* or Havarti*
- 1 clove garlic, crushed
- 2 drops of tabasco sauce
- ½ tsp. (2 mL) Irresistibles paprika*
- 2 Tbsp. (30 mL) chopped fresh chives
- To taste dry bread crumbs*
- To taste pepper
Preparation
Bring a large saucepan of salted water to a boil. Add the macaroni and cook until al dente.
Drain, cover and keep warm.
In a large saucepan, place the pancetta and cook over high heat, stirring for 4 minutes or until browned and crisp. Drain on paper towel.
In the same saucepan, heat butter over medium heat, add flour, stirring 1 minute and add milk stirring continuously until mixture thickens.
Add the cheeses, garlic, tabasco and paprika and stir until the cheeses have melted, about 5 minutes.
Add the macaroni and pancetta until heated through, 2 minutes Add the chives.
Spread over the pasta dry bread crumbs and bake until golden brown.
