Recipe ingredients

  • 1/8 green cabbage, finely shredded
  • ¼ onion, thinly sliced
  • ½ cup (125 mL) vegetable broth
  • ¼ cup (60 mL) whipping cream (35% m.f.) or table cream (15% m.f.)
  • 1cup + 7 Tbsp. (350 mL) roughly mashed potatoes
  • 1 Tbsp. (15 mL) butter*
  • Salt and white pepper to taste

Preparation

In a large skillet, sweat the onion and cabbage in butter over low heat.
Pour in broth and continue cooking over low heat until the liquid has evaporated.
Stir in cream, then mashed potatoes. Season and serve piping hot.

Suggestion

For traditional colcannon, make a well in the centre and pour in melted butter, about a knob’s worth.
