Recipe ingredients

  • 6 egg* yolks
  • 1 cup (250 mL) porter
  • 5 Tbsp. (75 mL) sugar*
  • 1⅔ cups (400 mL) whipping cream (35% m.f.)

Preparation

In a bowl, vigorously whisk together egg yolks and sugar until thick and smooth.
In a saucepan, bring porter to a boil. Once it’s boiling, add cream and bring to a boil once more.
Whisk porter and cream into sugar and egg yolk mixture.
Pour custard into ramekins and set in a pan of water. Bake at 325°F (170°C) for some 60 minutes, until custards are set.
If the pan is filled with boiling water, baking time will be about 45 minutes.
