Recipe ingredients
- 8 lamb chops
- 8 fresh rambutans, cut in two, pitted and peeled, using a small spoon
- ½ onion
- 1 garlic clove
- 2 tsp. (10 mL) Irresistibles curry powder*
- 1 Tbsp. (15 mL) fresh ginger
- 1 cup (250 mL) coconut milk
- 1 Tbsp. (15 mL) butter*
- 9 oz. (250 g) green beans, blanched in salted water
- Salt and pepper to taste
Preparation
In a food processor, purée onion, garlic, ginger, curry powder and coconut milk.
In a skillet, melt butter and brown meat over high heat 1 minute per side. Salt and pepper meat and cook 5 minutes per inch (2.5 cm) of thickness for medium doneness. Remove and keep warm.
In the same skillet, cook purée over medium heat for 5 minutes.
Add rambutans and green beans.
Cook for 5 minutes.
Spoon curry sauce over meat and serve.
