Recipe ingredients

  • 14 oz. (400 g) Irresistibles frozen cooked shrimp, peeled, deveined*
  • 2 cups (500 mL) shredded lettuce
  • ¼ cup ( 60 mL) finely chopped green onion
  • 1 cup (250 mL) thinly sliced celery
  • 1 cup (250 mL) coarsely grated carrot
  • 1 cup (250 mL) frozen peas
  • 1/2 cup grated cheddar cheese*
  • Salad Dressing
  • 2/3 cup (170 mL) Irresistibles plain yogurt *
  • 2 Tbsp. (30 mL) mayonnaise*
  • 1 Tbsp. (15 mL) lemon juice
  • 2 tsp. (10 mL) honey*
  • 1 Tbsp. (15 mL) finely chopped chives
  • 1/4 tsp. (1 mL) dill weed

Preparation

Thaw shrimp and drain well. In a glass bowl, layer lettuce, onion, celery, carrot, peas, shrimp and cheese. Refrigerate for several hours. Combine remaining ingredients and serve with the salad.

Suggestion

Shrimp can be replaced with 500 g of cooked fish fillets, in chunks
