Recipe ingredients
- Don’t throw out those leftover mashed potatoes! Make potato cakes to go with the breakfast eggs.
- 1 cup (250 mL) cold mashed potatoes
- ⅓ cup (80 mL) grated Gruyère cheese*
- 2 Tbsp. (30 mL) chopped green onions
- Breadcrumbs as needed
- Irresistibles Canola oil* as needed
Preparation
Combine cheese and green onions with mashed potatoes.
Form into small cakes.
Dredge in breadcrumbs.
Heat oil in a skillet over high heat and pan-fry potato cakes 2-4 minutes per side until golden.
