Recipe ingredients

  • 2 cloves garlic, minced
  • 1 tsp. (5 mL) grapefruit zest 
  • 1/2 cup (125 mL) fresh-squeezed Rio Star grapefruit juice (1 grapefruit)
  • 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil*
  • 2 Tbsp. (30 mL) honey* 
  • 1/2 tsp. (2 mL) salt 
  • 1/4 tsp. (1 mL) black pepper
  • 340 g uncooked shrimp
  • 12 wooden skewers, soaked for 30 minutes in water

Preparation

Preheat grill to medium.
In a small bowl, combine garlic, grapefruit zest, grapefruit juice, olive oil, honey, salt, and pepper.
Add shrimp to the marinade, stirring well to coat.
Marinate for 20 minutes, stirring after 10 minutes.
Thread shrimp onto wooden skewers. Grill until just done, 2 to 3 minutes per side. Brush each side with glaze while grilling.
In a small saucepan, bring the remaining glaze to a boil. Boil for 1 minute, remove from heat, pour over shrimp skewers and serve.
