- 8 oz. (250 g) cream cheese, softened
- 1/2 Rio Star grapefruit, cut into supremes
- 2 Tbsp. (30 mL) grapefruit zest
- 40 vanilla wafer cookies
Preparation
Combine cream cheese, grapefruit sections and zest, then beat until smooth and of spreading consistency.
Spread a small spoonful of cream cheese mixture on flat side of one wafer and top with another wafer.
If desired, cover and place in refrigerator for 1 hour.
