  • 3 Tbsp. (45 mL) Irresistibles Extra Virgin Olive Oil
  • 2 Tbsp. (30 mL) each finely chopped fresh basil, thyme and parsley
  • 2 tsp. (10 mL) finely grated lemon zest
  • 1 clove garlic, minced
  • 1/2 tsp. (2 mL) salt
  • 1/2 tsp. (2 mL) black pepper
  • 4 boneless trout fillets with skin (about 2 lb/1 kg)
  • Irresistibles Olive Oil Spray
  • Fresh parsley and lemon slices for garnish

Preparation

Preheat the barbecue to medium-high.
In a small bowl, stir together extra virgin olive oil, basil, thyme, parsley, lemon zest, garlic, salt and pepper.
Spray the flesh side of each trout fillet with olive oil spray. Grill trout, flesh side down, for 2 to 3 minutes, until browned. Turn trout over. Spread herb mixture evenly over flesh side of each trout fillet. Grill trout for a further 2 to 4 minutes, until fillets are firm and flesh is opaque.
Serve garnished with fresh parsley sprigs and lemon slices

Suggestion

SUPER SIZE IT!
If your seafood department sells whole fresh trout, sprinkle the cavities of four
12-oz (350-g) cleaned trout with a little salt and pepper. Stuff each with 2 sprigs fresh basil and thyme, 2 strips lemon peel and 1 clove garlic, slivered. Wrap 3 thin slices of Artisan Collection® Prosciutto around each trout, overlapping the slices slightly. Spray with Irresistibles Olive Oil Spray and cook over medium-high heat for 8 to 10 minutes, turning once, until flesh is opaque.
