Recipe ingredients
- 1 Irresistibles Baguette
- 2 Tbsp. (30 mL) Irresistibles Mezzo Extra Virgin Olive Oil
- 1 clove garlic, cut in half
- Irresistibles Olive Oil Spray
- 1 pkg (340 g) Irresistibles Garlic & Herb Grilling Shrimp, thawed
- 2 small romaine lettuce hearts, leaves, separated, washed and dried
- 1/2 cup (125 mL) Irresistibles Bacon Caesar Dressing
- 1 tbsp (15 mL) lemon juice
- 1/2 cup (125 mL) Irresistibles 100% Grated Parmesan Cheese
- 1/4 cup (60 mL) chopped parsley
Preparation
Preheat the barbecue to medium.
Cut 8 diagonal 1/2-inch (1-cm) slices from baguette. Brush baguette slices on both sides with extra virgin olive oil. Grill baguette slices for about 2 minutes, turning once, until golden. Remove from grill. Rub cut sides of garlic clove over both sides of each baguette slice. Set aside.
Increase temperature of grill to high. Spray a wad of paper towels with olive oil spray and use to oil grill. Grill Garlic & Herb shrimp for 2 to 4 minutes, turning once, until firm and pink.
Arrange whole romaine lettuce leaves on 4 dinner plates, dividing evenly (or arrange on a large platter). In a small bowl, stir together dressing and lemon juice. Drizzle dressing evenly over romaine.
Top the salads with shrimp, dividing them evenly. Sprinkle with parmesan and parsley.
Garnish with grilled baguette slices.
