Recipe ingredients
- 16 cherry tomatoes on the vine
- 1 mango
- 15 mL (1 Tbsp.) fresh coriander, chopped
- 15 mL (1 Tbsp.) Irresistibles white balsamic vinegar
- Irresistibles extra virgin olive oil
Preparation
Cut the mango into small cubes. In a bowl, combine mango cubes, coriander, balsamic vinegar (preferably white so that it doesn’t colour the mixture) and a splash of the oil.
Cut the tops off the cherry tomatoes and set aside. Scoop out the flesh of the tomato, fill with the mango mixture and top with the tomato caps. Voila! A wonderfully refreshing appetizer with an exotic accent.
