Recipe ingredients
- 500 g CATELLI Large Shells
- 2 cups (500 mL) broccoli florets
- 1/3 cup (80 mL) Irresistibles extra virgin olive oil*
- 2 cloves garlic, chopped
- 8-10 cherry tomatoes, cut in half
- 1 cup (250 mL) cubed cheese of choice (e.g., mozzarella, blue, cheddar etc..) (light or low-fat)
- Chopped fresh parsley or basil
Preparation
Cook shells according to package directions, adding broccoli during the last 5 minutes.
Heat oil, sauté garlic 30 seconds.
Add tomatoes; sauté 1 to 2 minutes longer.
Toss shells with garlic-tomato mixture and cheese; serve topped with parsley.
