Fish on Garlic Brown Butter Beans with Pine Nuts

Recipe ingredients
- 1 – 1½ lb. (450 – 675 g) mixed green and yellow beans
- 2 Tbsp. (30 mL) butter*
- 1 garlic clove, peeled and crushed
- ¼ cup (60 mL) pine nuts
- 2 Tbsp. (30 mL) water
- ¼ tsp. (1 mL) salt
- Freshly ground pepper to taste
- Lemon zest to taste
- 4 white fish fillets, cooked
Preparation
Trim stem ends from beans. Blanch beans in a pot of boiling water for 1 – 2 minutes. Remove and drain.
In a large skillet over moderate heat, melt butter. Add garlic and cook until garlic is golden and butter is foamy and brown.
Add pine nuts and cook, stirring constantly, for 30 seconds. Add water and beans. Cover and cook for another 2 – 3 minutes or until beans and tender and heated through. Remove garlic. Season.
In each heated plate, place some beans, sprinkle with lemon zest and top with a fillet. Serve immediately
Suggestion
In a non-stick grilling pan, cook fillets on medium-high heat 2 minutes per side or until lightly browned and fish breaks apart when lightly pressed.* We recommend Selection and Irresistibles products.
