Recipe ingredients
- 6 corn, leaves removed
- 1/ 2 cup (125 mL) light mayonnaise *
- 1/ 4 cup (60 mL) roasted red peppers in a jar, drained, diced
- 2 Tbsp (30 mL) chopped chives
- To taste freshly ground black pepper
- 1 Tbsp (15 mL) butter, melted
- 8 European sausages
Preparation
In a bowl, whisk together the mayonnaise, peppers, chives and black pepper. Reserve half of the mayonnaise..
Preheat barbecue to medium high. Oil the grate.
Brush corn with butter and bake about 8 minutes, turning occasionally.
Remove from heat and brush the corns of the rest of mayonnaise and put on the barbecue. Continue cooking about 8 minutes, turning occasionally. The grains should be brown and still slightly firm to the bite.
Serve with mayonnaise that has been reserved.
Preheat barbecue to medium-high. Grill sausages 5 – 6 minutes. Slice cooked sausages diagonally.
