Recipe ingredients
- 2 Tbsp. (30 mL) of Irresistibles extra virgin olive oil*
- 1 cup (250 mL) diced and peeled eggplant
- 1 medium red onion diced
- 3 garlic cloves chopped
- 3 medium sweet red peppers diced
- ¼ tsp (1 mL) hot pepper flakes
- 400 ml Vivi Bene O’Sole Mio Rosée Sauce
- 350 g Vivi Bene O’Sole Mio Linguini
- 2 Tbsp (30 mL) salt
- ¼ cup (60 mL) fresh chopped basil
- ¼ cup (60 mL) fresh chopped parsley
Preparation
In a non-stick frying pan, heat oil and add eggplants, onions, garlic and sauté for 10 minutes.
Add peppers and sauté for another 5 minutes. Add Vivi Bene O’Sole Mio Rosée Sauce and simmer.
Cook pasta as per package instructions and strain.
Heat sauce and add pasta.
Place on a plate and garnish with fresh basil and parsley.
