Recipe ingredients

  • 3 bars (100 g each) Lindt Excellence 70% Cacao Dark Chocolate, chopped or
  • 3 bars (100 g each) Lindt Swiss Classic White Chocolate, chopped
  • 12-14 medium sized strawberries
  • Garnish
  • ½ bar (100 g each) Lindt Excellence 70% Cacao Dark Chocolate, chopped or
  • ½ bar (100 g each) Lindt Swiss Classic White Chocolate, for contrast, chopped

Preparation

Wipe the strawberries with a damp cloth and pat dry. Do not wash them.
Temper the chocolate  http://www.lindt.com/ca/swf/eng/connaisseurs/recettes/what is tempering/.  Hold the strawberry by its green cap and dip into the tempered chocolate.
Gently shake off the excess chocolate and place the strawberry on a tray lined with parchment paper. Repeat with remaining strawberries.
Place the tray in the refrigerator for about 5 minutes to set the chocolate.
Using a piping bag with a small tip, drizzle with the contrasting chocolate onto the strawberry for a very elegant, professional look.

Suggestion

Variations
Take strawberries and other fresh fruits (kiwi, pineapple, melon, banana) and cut them into bite-size pieces. Put them on wooden skewers and place on a tray lined with parchment paper. Fill a small piping bag with tempered chocolate and drizzle it over the fruit kebabs. You can also drizzle the chocolate with a teaspoon. Handle like the dipped strawberries.
