Recipe ingredients
- 2 cups (500 mL) trimmed spinach leaves
- 1 scallion, minced
- 2 Tbsp. (30 mL) Irresistible Robusto olive oil*
- 1 Tbsp. (15 mL) Irresistible wine vinegar*
- 1 Tbsp. (15 mL) fresh chopped parsley
- 2 hard-cooked eggs*, sliced
- 2 slices cooked bacon*, crumbled
Preparation
In a salad bowl, put spinach leaves and scallions; set aside.
In a bowl, mix olive oil, wine vinegar and parsley; pour over spinach leaves and toss.
Put egg slices on the salad; add bacon and serve.
Suggestion
Add bean sprouts, red peppers, raisins and slivered almonds.* We recommend Selection and Irresistibles products.
