Recipe ingredients
- 2 lb. (1 kg) whiting, cut into big pieces
- 1 Tbsp. (15 mL) Irresistibles extra virgin olive oil*
- 2 medium carrots, diced
- 4 plum tomatoes, peeled, seeded and diced
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- ⅓ cup (80 mL) currants
- 1 tsp. (5 mL) Irresistibles ground ginger*
- 1 tsp. (5 mL) Irresistibles paprika*
- 1 tsp. (5 mL) Irresistibles ground cumin*
- 1 tsp. (5 mL) Irresistibles ground turmeric*
- ½ tsp. (2 mL) Irresistibles ground cinnamon*
- 1 tsp. (5 mL) saffron
- ¾ cup (180 mL) water
- ½ cup (125 mL) chopped coriander
- 1 lemon, cut into wedges
- Salt and freshly ground pepper to taste
Preparation
In a skillet, brown fish in oil. Add vegetables and currants and cook over low heat for 5 minutes.
Stir in spices and season to taste with salt and pepper. Add water, cover and simmer for 10 minutes.
Suggestion
Garnish tajine coriander and lemon wedges and serve with quinoa.* We recommend Selection and Irresistibles products.
