Recipe ingredients
- ¼ cup (50 mL) buttermilk or plain yogurt
- ½ tsp (2 mL) hot pepper sauce
- 4 U.S. Farm-Raised Catfish fillets, 6 to 8 oz (180 to 250 g) each
- Salt and pepper to taste
- ½ cup (125 mL) cornmeal
- 2 tbsp (30 mL) butter
- 1 tbsp (15 mL) olive oil
Preparation
Stir buttermilk or yogurt with hot sauce. Brush on catfish and marinate 10 minutes. Sprinkle catfish with salt and pepper, then lightly coat with cornmeal.
Melt butter with olive oil in a non-stick frying pan over medium-high heat. When hot, cook until golden and crisp and fish flakes easily with a fork, 4 to 5 minutes a side.
