Recipe ingredients
- Batter
- 1 cup (250 mL) all-purpose flour*
- 3 Irresistibles eggs*
- ½ cup (125 mL) milk
- Salt and pepper to taste
- Filling
- 1 cup (250 mL) fish stock
- 7 oz. (200 g) mahi-mahi fillets
- 2 green onions, minced
- 1 garlic clove, minced
- 3 Tbsp. (45 mL) chopped parsley
- Salt and pepper to taste
- Oil for frying
- Mayonnaise
- 1 cup (250 mL) mayonnaise*
- 2 tsp. (10 mL) lemon juice
- 2 Tbsp. (30 mL) Irresistibles capers*, chopped
Preparation
Batter
In a large bowl, mix all batter ingredients together and set aside.
Filling
In a saucepan, bring fish stock to a simmering boil and poach mahi-mahi fillets for about 10 minutes. Shred fish with a fork and set aside. In a large bowl, combine all filling ingredients, except oil for frying, and stir in batter and shredded fish.
Roll tablespoonfuls of the mixture into little balls. Set aside until time to fry them up.
Mayonnaise
In a bowl, combine all mayonnaise ingredients and reserve in the refrigerator.
Cooking
In a deep fryer or saucepan, heat oil for frying.
Fry the accras 5 – 6 minutes in the hot oil or until crisp and golden brown. Serve hot with mayonnaise.
