Recipe ingredients
- Caesar dressing
- 125 ml (1/2 cup) Saputo grated parmesan cheese
- 15 mL (1 Tbsp.) Dijon mustard
- 10 mL (2 tsp.) garlic, minced
- 3 anchovies, chopped finely
- 150 mL (2/3 cup) mild olive oil
- 15 mL (1 Tbsp.) freshly squeezed lemon juice
- Salt and freshly ground pepper to taste
- 1 head romaine lettuce, washed and dried
- Sufficient quantity, croutons
- 6 slices smoked bacon, cooked until crisp and crumbled
- 125 ml (1/2 cup) Saputo grated parmesan cheese
- Accompaniments
- 4 chicken brochettes, grilled
- Saputo parmesan cheese petals to taste
Preparation
Place all the ingredients for the dressing, except for the olive oil, in a food processor. While the machine is running, add the oil in a thin stream through the feed tube. When the dressing is emulsified, taste, adjust the seasonings and set aside.
Tear the lettuce into pieces, place in a large salad bowl and toss with the dressing, croutons and bacon bits. Add the grated parmesan and toss again.
Serve with the chicken brochettes and parmesan petals.
Suggestion
Homemade croutons add a delicious and authentic crunch to this salad. Arrange cubes of bread on a baking sheet and drizzle with olive oil. Place in a preheated 140°C (275°F) oven and stir every 7 or 8 minutes until the croutons are evenly toasted.
