Recipe ingredients
- 454 g (1 lb) lobster claws,frozen
- 1/2 netted melon (cantaloupe), seeds removed
- 1/2 honeydew melon,seeds removed
- 500 mL (2 cups) cherry tomatoes, halved
- Balsamic Mayonnaise
- 250 mL (1 cup) Irresistibles Life Smart olive oil mayonnaise
- 1 shallot, minced
- 45 mL (3 tbsp) Irresistibles white balsamic vinegar
- 45 mL (3 tbsp) chives, minced
- Salt and pepper to taste
Preparation
Defrost the lobster claws.
Remove the lobster meat from the hells, pat dry with a paper towel and refrigerate.
In a bowl, mix all of the mayonnaise
ingredients and refrigerate.
Using a melon ball cutter, scoop balls from the melons and place them in a large bowl.
Add the tomatoes and the lobster, and
refrigerate until ready to serve. Add the mayonnaise at the last minute so that the fruits don’t release their water.
