Recipe ingredients
- 300 g Champlain cheese wheel
- Port caramel
- 8 dried figs, halved
- 6 small whole shallots, peeled
- 500 mL (2 cups) port or Irresistibles grape juice
- 15 mL (1 Tbsp.) Irresistibles maple syrup
- 1 star anise, whole
- 1 mL (1/4 tsp.) cardamom seed, shelled
- 1 cinnamon stick
Preparation
Preheat oven to 200˚C (400˚F).
In a saucepan, bring port caramel ingredients to a boil on high heat and reduce by three-quarters.
Remove the figs and shallots, strain the remaining syrup and set aside.
Place the small cheese wheel on a baking sheet and heat for 5 to 7 minutes.
Garnish the warm cheese with the fig and shallot mixture and serve with the port caramel.
Suggestion
VariationSlice the cheese wheel horizontally
and stuff with the fig and shallot mixture. Heat for 5 to 7 minutes and serve with the port caramel.
