Recipe ingredients

  • 3 Tbsp. (45 mL) Selection butter*
  • 4 large button mushrooms, cut into thick slices
  • ½ small shallot, finely sliced
  • 1 tsp. (5 mL) finely chopped fresh ginger
  • Room temperature Selection butter* as needed
  • 8 slices Irresistibles Country Garlic or Harvest Grain bread*
  • 5 oz. (135 g) Swiss cheese, sliced
  • 120 g (4 oz) Havarti cheese, sliced
  • Fresh thyme leaves to taste
  • Arugula as needed

Preparation

In a large skillet, melt butter on medium-high heat and brown mushrooms for 3 minutes. Add shallot and brown. Add ginger. Set aside.
Butter slices of bread on one side. Cover the unbuttered side of 4 slices with cheese and mushroom mixture, sprinkle with thyme leaves, add arugula and finish with more cheese.
Close sandwich with another slice of bread, buttered side up.
Using a spatula, press down on the sandwiches.
