Hot Pork Sandwich with Sautéed Vegetables

Recipe ingredients
- 1 Tbsp. (15 mL) olive oil
- 3/4 lb. (340 g) Quebec Pork steaks
- Salt and pepper to taste
- 1/2 red pepper, cut into strips
- 1/2 green pepper, cut into strips
- 1/2 red onion, cut into strips
- 1/4 cup (60 mL) store-bought Italian dressing
- 4 small French bread sticks
- 1/4 cup (60 mL) store-bought olive tapenade
- 8 slices of Swiss cheese
Preparation
In a large pan, heat oil over high heat and brown pork for 2 minutes on each side. Season generously.
Add vegetables and continue cooking for 3 to 4 minutes.
Deglaze with vinaigrette and cook for two more minutes.
Cut French bread in two, lengthwise, without cutting all the way through. Open, spread tapenade and top each sandwich with 1/4 of the ingredients. Close each sandwich.
Heat sandwiches in the oven for 5 minutes and serve immediately with fries and crudités.
Suggestion
Replace tapenade with basil or sun-dried tomato pesto.
